Sopapilla Recipe

Once you’ve lived in New Mexico for a while, you begin to understand there is a natural order to dining out:  at the beginning there will be chips and salsa, in the middle there will be green and/or red chile, and at the end, there will be sopapillas. This fried dough creation is a staple of New Mexican cuisine, usually served simply with a bottle of honey next to the basket. For those that don’t know how to make sopapillas, a New Mexican restaurant is the only place you’ll be able to get them. But don’t despair!
