Recipe: Elote: Mexican Street Corn

Elote, or Mexican Street Corn, is a classic street food in Mexico that we saw popping up all over the place in Santa Fe last summer. Basically it’s an ear of corn that has been roasted over an open grill and is then coated with salt, chile powder, butter, cotija cheese, lime juice, and mayonnaise or crema fresca. It’s super delicious and we hope we see the trend of local restaurants offering their own versions continuing in 2018!
