One of our favorite restaurants in Santa Fe is Jambo Cafe. Owner-Chef Ahmed Obo hails from Lamu Island, off the coast of Kenya and it was there, in his mother’s kitchen, that he mastered his homeland’s unique cuisine. He later came to Santa Fe, New Mexico in 2009, and opened Jambo Cafe which was an instant success. We’re definitely loyal fans which is why we are so excited to try Chef Obo’s recipe for CURRIED BLACK BEAN AND BUTTERNUT SQUASH STEW. Yum!
