How to eat Prickly Pear Cactus

If you’ve been hiking around New Mexico in the fall, you’ve probably noticed all the purple-ish prickly pear fruit growing on the nopales cactus (the cacti with beaver tail-like paddles). Did you know these thorny fruits are actually quite edible? It’s true! These beautiful fruits have a delicious flavor that some have compared to bubble gum, raspberry, and even watermelon.
