It’s fantastic to see Santa Fe embrace food trucks so wholeheartedly over the past few years. With offerings all over town that range from burgers to Thai food to donuts and more, there are so many trucks to visit and yummy foods to sample!
One truck that I keep returning to is Fusion Tacos. With a truck located at Old Santa Fe Trail and Paseo de Peralta and another one located at Airport Road and Lucia Lane, Fusion Tacos has also popped up in the Santa Fe Place Mall food court and since last summer, they’ve secured a 4th location at Santa Fe Brewing’s Beer Hall Kitchen.
My favorite dish to order is the Birria Tacos – a meat and cheese taco that’s fried and served with a consomme dipping sauce. It is incredibly yummy!
