While this isn’t a New Mexican dish, which I usually make the focus of my recipe posts, I have been hearing RAVE reviews about this cassoulet from Mille, a new French cafe and creperie that recently opened in downtown Santa Fe.
Rumor has it that they won’t serve it much longer as it will be a seasonal offering offered in only certain winter months, but if you can’t make it over to Mille soon, or if you live outside of Santa Fe, here’s their recipe via New Mexico Magazine so you can prepare this cold weather, comfort food dish yourself.
